Research Interests:

Dr Beaudry's research activities focus on preserving the postharvest quality of fruits and vegetables. Specific areas of expertise include modified atmosphere packaging, controlled-atmosphere storage, non-destructive quality assessment, flavor analysis, apple scald physiology and use of volatiles to inhibit decay. Spinoffs from research have lead to the development of a number of practical devices or methods for which patent applications have been submitted.
 
Recent efforts have elucidated the relationship between package O2 and product respiration, temperature and package film permeability. Models have been created that permit the prediction of the O2 in the package under essentially any environmental condition for a variety of plant products. Special emphasis has been placed on the development of an apple slice product. To this end, identifying a naturally-derived, volatile compound that inhibits fungal decay, but imparts little to no flavor taint. Non-destructive quality assessment techniques include research on the use of acoustic impulse elasticity, force/deformation relationships, volatile emanations and chloroplast fluorescence.
 
Dr. Beaudry's research efforts are supported by a well-equipped laboratory suite. Instrumentation and facilities in use include dedicated O2/CO2 analyzers, numerous gas chromatographs, GC/mass spectrometer, chloroplast fluorometer, wet lab, sterile hood, over 400 CA chambers, 16 controlled environment rooms, packaging facility, computer lab, etc. Partnering relationships have been established with the MSU School of Packaging, Agricultural Engineering and Food Science and Human Nutrition.
 
Much of Dr. Beaudry's research service-oriented. Examples would include carrot storage experiments with Gerber Foods Co.; root pruning effects on apple quality and storability and apple storage techniques. Recently, applied research has been focused on the reduction of pesticide residues. Projects include evaluating non-chemical control strategies for apple scald and screening of available biocontrol agents for the control of storage diseases.
Dr. Beaudry's Extension component also includes his activities as coordinator of annual Michigan Apple Maturity Program, designed to improve quality of Michigan apple fruit - use of conference call and FAX with regional CES agents. Information thus shared was passed on to Michigan shippers, packing houses, storage operators and growers.
 
Dr. Beaudry is also responsible for organizing and conducting the annual Controlled Atmosphere (CA) Storage Clinics. The CA Clinic audience is primarily apple storage operators from the Great Lakes region and Canada. Storage operators are kept up-to-date on most recent changes in CA and packinghouse regulations, methods for increasing efficiency of CA operations and techniques for improving their ability to maintain high fruit quality. Over 700 pages of notes have been distributed in three indexed volumes of the MSU CA Clinic Notebook.
